How to make oat flour
Making your own oat flour is an easy way to save money.
Just add whole rolled oats to a high powered blender. Blend the oats until they resemble a fine flour.
That’s it!

How to make oat flour pancakes
To a large bowl add 1 and 1/2 cups of oat flour, 3 teaspoons of baking powder, and 1/4 teaspoon of salt. Whisk together and set aside.
In a separate bowl, whisk 1 egg, then add 1 cup of milk, 2 tablespoons of maple syrup, and 1 tablespoon of vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk to combine.
Let the batter rest for 5 minutes.
Meanwhile, start heating up a griddle or skillet. Lightly grease the griddle with coconut oil.
Using a 1/3 measuring cup, scoop up the batter and pour it onto the griddle.
Cook until bubbles start to form on the surface of the pancake. Flip and cook on the other side until the pancake it lightly golden brown on both sides.

Repeat with remaining batter.

can I batch cook these and freeze them?
Absolutely! These make the perfect on the go breakfast.
Make a couple batches of these oat flour pancakes and freeze them for eating throughout the week.
To Freeze: Place pancakes in a single layer on a baking sheet and freeze for 30 minutes. Then stack the pancakes into a gallon size freezer bag.
You can also just stack the unfrozen pancakes in a freezer bag, but make sure to layer parchment paper or wax paper between each pancake.
Try to use frozen pancakes within two months for best taste.

How to reheat frozen pancakes
toaster
Pop a waffle in each slot of your toaster and let it heat until warm. Make sure to watch it, however, as the toaster can make it crispy.
Just make sure you make your pancakes small enough so that they fit in your toaster.

Oven
This works great if you have a bunch of pancakes to reheat. Preheat the oven to 350° F.
Place pancakes in a single layer on a baking sheet and cover with foil.
Bake for 10 minutes until the pancakes are warm.
Microwave
Place up to five pancakes on a microwave safe plate (this will depend on the size of your pancakes).
Microwave until warm and soft.

Substitutions
If you don’t have or avoiding regular dairy milk, swap for your favorite plant based milk such as almond, oat, or coconut milk.
Don’t have baking powder? Just add 3/4 of a teaspoon of baking soda and 1 and 1/2 teaspoons of white distilled vinegar.
Instead of using maple syrup, add 2 tablespoons of sugar and add 2 extra tablespoons of milk.
Ran out of eggs? Add in 2 tablespoons of peanut butter, 1/4 cup of applesauce or 1/4 cup of mashed bananas.
