The Ingredients
Butter Use 2 sticks of butter, or 1 cup. For the best flavor and nutrition, try to use a grass fed butter.
Garlic To get that good garlic-ee flavor, use 6 cloves of minced garlic. This is about 2 tablespoons when it is minced. We are going to sautee it in butter so that it will be even more flavorful!
Chives You will need 1/4 cup of finely chopped chives. A small bunch of whole chives should be enough.
Salt Only add the salt if your butter is not salted, otherwise you will have way too much salt! Use a flavorful good quality salt such as this one. You will need 1/2 teaspoon.

Directions
Finely mince the garlic.
To a cast iron pan, add 2 tablespoons of butter and melt it.
Add the minced garlic to the butter and sautee it for about five minutes on low. Don’t overcook.

Take off the heat and allow the butter and garlic to cool.
Chop the chives, set aside.
To a medium sized mixing bowl add the reserved butter, salt, chives, and cooled butter.

Mix all the ingredients very well together.
Serve at room temperature or form into a log using parchment paper and chill.

Substitution Ideas
If you don’t have any garlic or chives on hand, you can substitute any of the following.
- Basil
- Rosemary
- Thyme
- Oregano
- Parsley
- Dill
- Cilantro
Don’t have fresh herbs? That’s ok, just add 1 and a half tablespoons of the dried herb instead of the 1/4 cup of fresh.

How to Use Garlic Herb Butter
This flavored butter is very versatile and can be used in many different recipes. Here are a few ideas.
Garlic Herb Steak Sandwich Toast 2 pieces of sourdough bread or part of a baguette. Spread a thin layer of garlic herb butter on both sides of the bread. Layer on thinly sliced steak and tomatoes.
Buttered Tomatoes Thinly slice some tomatoes. Spread a thin layer of herbed butter on the slices.
Herb Butter Crackers Spread a thin layer of herbed butter on top of some artisanal or saltine crackers.
Sauteed Vegetables Instead of sauteing your vegetables in regular butter, replace it with this garlic herb butter to boost the flavor.

Garlic Herb Butter
Ingredients
- 1/4 cup chives
- 6 cloves garlic
- 1 cup unsalted butter softened, divided
- 1/2 tsp salt
Instructions
- Finely chop the garlic cloves.
- To a cast iron skillet, add 2 tablespoons of butter. Let the butter melt.
- Add chopped garlic.
- Sautee the garlic for about five minutes on low. Set aside to cool.
- Finely chop chives, set aside.
- To a bowl, add remaining butter, the salt, chives and cooled garlic butter.
- Mix everything together thoroughly.
- Serve at room temperature or roll into a log using parchment paper and chill for at least 2 hours.
