For a recent camping trip with my sisters, I decided we needed some ghee.
After looking at my favorite usually well-priced grocery store, I saw that a pint of ghee cost $7.99.
No thank you.
Maybe if butter prices are sky high that would be a good price, but at current rate, that is expensive.
I am fortunate enough to be able to get my hands on some fresh dairy products, including cream.
That being said, I am able to make all my own butter.
So, I set out to try to figure out how to make my own shelf-stable ghee.
There are many different ways you can go about making ghee.
However, I wanted a super simple method that didn’t require me to stand at the stove stirring and skimming, stirring and skimming.
Which was exactly how the first batch of ghee I made went.
Fast forward to today, I have found one of the easiest methods to making your very own ghee at home using homemade or store bought butter.

What is ghee?
Ghee is butter that has been cooked enough to extract all of the milk solids.
During the process of making ghee, you are cooking and straining out the parts of the butter that make it spoil faster.
When you cook down the butter, you will be left with a clear, liquid, shelf-stable ‘ghee’.
You can use ghee for almost anything you would use butter or oil for making it even more versatile than butter itself.
Not to mention the flavor ghee adds to a recipe is crazy! Because of the cooking process, ghee is complimented with a delicious nutty flavor that regular butter does not have.

Why should I make ghee?
Shelf-Stable
The biggest reason for making ghee, is that it is shelf-stable. Meaning, you do not have to refrigerate ghee for long periods of time; much longer amounts of time than butter.
Homemade ghee can last on your shelf for up to 6-9 months.
You can also freeze or refrigerate your ghee to help it last even longer.
Dairy Intolerances
This may seem contradictory, but ghee is often used by people who cannot eat dairy.
Ghee is often safe for dairy intolerant people because the milk solids are taken away, leaving only the pure fat.
Use ghee with caution if you are dairy intolerant, or talk to your provider, but you may be able to use ghee if you struggle with digesting dairy.
High Smoke Point
Another reason you should make ghee, is that it has a higher smoke point than butter.
Why is that?
When you remove the milk solids and anything else present in the butter, you are left with oil.
Because this oil (ghee) is pure fat, its smoke point is much higher. In fact, ghee has a higher smoke point than even many oils!
Smoke points:
- Butter: 350°F
- Coconut oil: 350°F
- Olive oil: 410°F
- Grape seed oil: 420°F
- Ghee: 485°F

What kind of butter should ghee be made with?
The kind of butter you use to make ghee with will give you slightly different taste, as well as, different nutritional value.
As with most healthy food options, buy or make the kind of butter you can afford.
Grass-fed, organic butter is the best option of butter, but just know, as long as you are using butter, this recipe will turn into ghee:).

How to make ghee
First, preheat your oven to 250°F.
Next, grab yourself a cast iron skillet or an oven safe baking dish.
Add a one pound of butter to the skillet.

Place the skillet or dish of butter into the oven.

Let this cook in the oven for about 1 hour.
*NOTE: you know your butter is done cooking when it has separated into three different layers.
- Top layer: milky white foam and milk solid
- Middle layer: clear yellow liquid
- Bottom layer: milk solids that are white or slightly browned
Pull the skillet or baking dish out of the oven.
Let the butter cool for 30 minutes.
Next, line a fine mesh sieve or strainer with a cheese cloth.

Pour the butter through the strainer into a container or jar of choice.
Screw a lid on top of your jar and your ghee is ready to use!

What about those ‘milk solids’?
You can use everything you strain off the ghee! As long as you are not dairy intolerant, add the solids to a recipe or spread it on toast. It is so delicious and has even more flavor than butter!

Homemade Ghee Recipe
Equipment
- 8×8 baking dish or cast iron skillet, oven safe
- fine mesh sieve or strainer
- cheese cloth
Ingredients
- 1 lb butter unsalted or salted
Instructions
- Preheat oven to 250°F.
- To a cast iron skillet or baking dish, add butter.
- Place dish or skillet into the oven.
- Let this cook for about 1 hour (see notes for how to tell if your ghee is done).
- Pull the dish out of the oven.
- Let this cool for about 30 minutes.
- Line a fine mesh sieve or strainer with cheese cloth.
- Pour the butter through the cheese cloth.
- Pour the ghee into a jar with a lid to store.
Notes
- Top: a milky white foam of milk solids
- Middle: a clear yellow liquid
- Bottom: white/brown milk solids
