Growing up I had never heard of or eaten a single kohlrabi.
Until one summer my sister and I stayed with our grandparents who lived in another state.
Grandma had us try some kohlrabi and we were immediately hooked!
Every since then, I have to eat at least a few kohlrabis every summer for two reasons.
- They remind me of grandma.
- They are delicious!
I have had a couple kohlrabis sitting on my counter for about a week and haven’t gotten around to making anything with them.
Especially now since they are getting a little less crisp and delicious from sitting out so long.
But then I thought of fries.
Kohlrabi fries are a great way to get your fry fix, especially if your potatoes aren’t ready to dig yet.
These fries are absolutely delicious. There is so much flavor coming from the smokey paprika and garlic powder.
Kohlrabi fries make a great addition to any summer evening supper. Pair them with hamburgers or steak, corn on the cob, watermelon and your favorite dipping sauce!

Where to find kohlrabi
Kohlrabi can be a hard vegetable to find at a regular grocery store.
The best places to find kohlrabi is usually at a farm stand, farmer’s market or a fancier grocery store.
Kohlrabis are very easy to grow, even in a container, making it a vegetable you can grow even in an apartment.
To grow your own kohlrabi, you can even pick up seedling plants at a local greenhouse in the spring for a pretty fair price.

Ingredients
- 2 large or 3 medium kohlrabi
- 2 Tbsp olive oil or ghee
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt, good quality
Directions
Preheat oven to 425°F.
Line a baking sheet with parchment paper and set aside.
Wash kohlrabi and pat dry.
Using a knife or vegetable peeler, peel the outside layer of the kohlrabi off. This skin is usually fairly thick.

Next, on a cutting board, cut each kohlrabi in half. Lay the kohlrabi, cut side down onto the cutting board.

Slice the kohlrabi halves into 1/2 inch slices.
Then cut the slices again into 1/3-1/2 inch fries.

To a large bowl, add all of your cut fries.

Pour the oil over the fries and toss to coat.

Sprinkle on the smoked paprika, garlic powder, and salt and toss again.

Spread the fries onto the lined baking sheet.

Bake in the oven for 25-30 minutes, stirring half way through.
Serve hot with your favorite dipping sauce!

Notes on Kohlrabi Fries Recipe
You can use almost any variety of kohlrabi for this fry recipe. I used purple and green kohlrabi together for mine and they turned out amazing!
For the oil, you can really use any kind of oil that you like to cook with. Coconut oil, olive oil, grape seed oil, butter, ghee, or lard.
To make this recipe, you will probably want to use more medium sized kohlrabis versus large, because the larger the kohlrabi, the more tough and chewy it will be.
If you want more crunchy fries, cook the fries for longer. Make sure you give them a stir every couple of minutes.
This recipe can also be used for potato fries! Simply swap in potatoes for kohlrabis and cook a little bit longer, making sure to give them a stir at least every 15 minutes.

Equipment
- knife
- cutting board
- baking sheet
- parchment paper
- mixing bowl
- flipper
