I have not been able to work on my garden this year near as much as I would have liked to.
It is a few miles away from our house and does not have a water source, plus the soil is quite sandy.
Which results in a very dry, sad, weedy garden.
That being said, I do have a bumper crop of something: lamb’s quarter!
So, this year is the year to try out all the lamb’s quarter recipes.
This hearty weed grows all over my garden for most of the growing season and even grows during the driest parts of the summer.
The best part about lamb’s quarter is, you don’t have to plant it!
In a lot of cases, if you just till or hoe your garden, lamb’s quarter will automatically start growing.
These lamb’s quarter chips are a great way to add more nutrition into your diet, while also tasting delicious.
A lot of times during the summer, you need to get more salt because you are sweating more.
The salt on these yummy wild chips will help balance your electrolytes, as well as, satisfy that crunchy craving!

How to Grow Lamb’s Quarter
To harvest lamb’s quarter, pick the young, tender leaves of the plant. Lamb’s quarter is a fast growing plant, so you can typically find plants in all stages of growing throughout the growing season in your area.
Pick the leaves before the plant goes to seed (a seed head will emerge from the top of the lamb’s quarter plant).
Because lamb’s quarter is a very hardy annual plant, you can be quite aggressive with how many leaves per plant you harvest.
Lamb’s quarter grows in abundance and will most likely come back even after a good pruning.

Nutritional Facts of Lamb’s Quarter
Here are just few nutritional benefits of eating lamb’s quarter:
- Vitamin A – more than spinach and 2.5x more than kale contains
- Calcium – 3x more than spinach contains
- Vitamin B1 – 2x the amount as spinach contains
- Vitamin B2 – 2x the amount as spinach contains
- Vitamin C – 3x the amount as spinach contains
- Protein
- Fiber
Lamb’s quarter also contains anti-inflammatory, antirheumatic, and laxative properties. It can also be used in treating urinary problems, bug bites, and skin issues.

How to Make Lamb’s Quarter Chips
Ingredients
Directions
Preheat your oven to 325°F.
Wash and pat dry your lamb’s quarter leaves.
Place the lamb’s quarter leaves into a bowl.
Drizzle olive oil over the leaves.

With your hands, massage the oil into the leaves.
Sprinkle the leaves with salt, toss again with your hands.

Transfer the leaves onto a baking sheet lined with parchment paper.
Place the baking sheet into the oven.
Bake the chips for 15-20 minutes, stirring every 8-10 minutes.
The chips are done when they are dry and crisp, do not overcook.
Take the chips off of the baking sheet and serve immediately.

Recipe Notes
Use parchment paper on your baking sheet to keep the chips from sticking and crumbling on the baking sheet.
This recipe calls for olive oil, but you can use any fat or oil you usually use, like ghee or grape seed oil.
Eat these chips within one day of making them for the best flavor and texture.
If you are not a fan of lamb’s quarter, or you don’t have any, you can also use this same recipe but swap the lamb’s quarter for kale.

Ingredients
- 2 cups lamb's quarter leaves
- 1 tsp olive oil extra virgin
- 1/4 tsp salt good quality
Instructions
- Preheat your oven to 325°F.
- Wash and pat dry your lamb's quarter leaves.
- Place the lamb's quarter leaves into a bowl.
- Drizzle olive oil over the leaves.
- With your hands, massage the oil into the leaves.
- Sprinkle the leaves with salt, toss again with your hands.
- Transfer the leaves to a baking sheet lined with parchment paper.
- Place the baking sheet into the oven.
- Bake the chips for 15-20 minutes, stirring every 8-10 minutes.
- The chips are done when they are dry and crisp, do not overcook.
