Zucchini is one of my favorite summer vegetables. First of all, because zucchini is so easy to grow in my part of the country.
Second of all, there are so many things you can do with zucchinis.
You can make zucchini boats, zucchini bread, muffins, or cake, make zucchini relish, or throw them into spaghetti sauce.
If you do not grow your own zucchini, never fear! Zucchini is usually fairly easy to find in the grocery store or at a roadside stand all summer long.
Whether you grew up eating zucchini, or this is your first time, this easy sauteed zucchini recipe is sure to hit the spot!

The Ingredients
Zucchini
For this recipe you will want to use 2 medium sized ripe zucchinis.
The best places to get zucchini are from your own garden, if you have one, or from a roadside stand.
I really enjoy buying produce from roadside stands because not only are you getting some of the freshest produce, but you are also giving business to those gardeners who work so hard.
Not to mention, most vegetable stands are quite reasonable in pricing, or at least comparable to the grocery store prices. (But taste soooo much better!)

Butter
Using butter for sauteing vegetables gives the best flavor, in my opinion.
There are many differing opinions if butter is actually healthy, so you will have to decide that for yourself.
I love to use butter because it is a natural fat and a by product of one of my favorite drinks: milk.
If you do not like using butter or if you can’t, just sub the butter for olive oil or any of your favorite cooking oils.
Salt
Can a good recipe not call for salt?
Use a high quality salt such as Redmond Real Salt or any other healthy salt you enjoy.
Using salt in a recipe not only gives great flavor, but also, if you use a high quality salt, you are getting great minerals that your body needs.
This makes this recipe not only great for when there are plenty of zucchinis, but also to help replace the salt you are using when you sweat during the summer months.
How to Make Sauteed Zucchini
Wash 2 medium zucchinis under cool running water.

Next, chop the zucchinis into bite-sized pieces. Depending on the size of the zucchinis, you can either cut them long wise in half or in quarters. Then chop them the halves or quarters into small pieces.

Heat a large cast iron skillet over medium heat.
Add in 2 tablespoons of butter (or other cooking fat of choice).

Wait until the fat has completely melted.
Add the chopped zucchini to the hot cast iron pan and turn the heat down to medium-low.

Sautee the zucchini, stirring every few mintues.
Once the zucchini is soft, about 15-20 minutes, take the pan off the heat.
Add 1 teaspoon of salt and stir to combine.

Spoon the sauteed zucchini into a serving dish and serve!

Perfectly Sauteed Zucchini
Ingredients
- 2 medium zucchinis
- 2 tbsp butter
- 1 tsp salt
Instructions
- Wash the zucchini.
- Cut the zucchini in half or quarters long wise.
- Chop the halves or quarters into small pieces.
- Heat a large cast iron skillet over medium heat.
- Add the butter to the skillet.
- Add the zucchini to the skillet and turn the heat down to medium-low.
- Let this cook for 15-20 minutes, stirring every few minutes to keep it from burning.
- Take the skillet off of the heat and add salt.
- Stir to combine.
- Spoon the zucchini into a serving dish and serve!
