Butter
Adding butter will give you that delicious buttery taste of a sugar cookie while adding to the structure and texture.
Sugar
You can’t have a sugar cookie without sugar of course!
Egg
Adding an egg gives you the fluffy texture of a cookie and also helps hold the crust together.

Vanilla Extract
A little vanilla will add to the delicious flavor of your gigantic sugar cookie.
All-Purpose Flour
Gives you the stabilization and structure you need to make this yummy cookie crust.
Baking Powder
Adding a little bit of baking powder to your crust will make it just a bit lighter and fluffier. It also helps to make the crust taste a bit more like a cookie.

Preheat oven to 350℉.
To a medium sized mixing bowl, add 1 and 1/2 cups of all-purpose flour and 1 teaspoon of baking powder. Whisk to combine and set aside.
In another medium sized bowl, cream together 1/2 cup of softened butter and 1/2 cup of white sugar sugar using a whisk or mixer.
Add one egg and mix until smooth.
Pour in 1 teaspoon of vanilla extract and mix again.
Fold the flour mixture into the butter mixture and mix until it resembles cookie dough.

Roll into a ball, cover in plastic wrap and place in the fridge for at least 10 minutes.
Take the dough out of the fridge and press into a 9 inch pie pan.

Prick holes in the pie crust with a fork to ensure that it doesn’t puff up too much.
Place in the preheated oven and bake until it is no longer shiny and is just starting to lightly brown around the edges. This should be between 11-14 minutes.
Take the crust out of the oven and set aside to cool for at least 30 minutes before filling with the no-bake cheesecake filling.

Ingredients for strawberry topping
Strawberries
Of course we can’t have a strawberry cheesecake without adding these yummy berries to the mix! Slice your strawberries so that they are easier to eat.
Sugar
Adding some sugar to your strawberry topping will help enhance the natural sweetness of the strawberries and make your pie a sweet eating experience.
Cornstarch or Arrowroot Powder
Choose from either cornstarch or arrowroot powder to help thicken your strawberry topping, making it stay on top of your no-bake cheesecake, even after slicing into it.
Water
Adding water to the strawberry filling gives you a nice sauce for the strawberries to hang out in. Don’t worry though, we don’t add enough to water down the fresh strawberry flavor.

Slice 1 and 1/2 pounds of strawberries and set aside.
To a medium sauce pan, add 1/2 cup of white sugar and 3 tablespoons of corn starch (or arrowroot powder), whisk together.
Slowly start adding 1/2 cup of water to the dry ingredients, mixing as you do.
Once all of the water has been added and whisked in, add 1/2 cup of the sliced strawberries to the mix.

Set the pan over medium heat and whisk continuously until the sauce thickens.

Pull off the heat and mix in the remaining strawberries. Let this cool for at least 15 minutes before placing in the fridge for at least 2 hours to finish cooling.

Ingredients for no-bake cheesecake filling
Cream Cheese
This is the base of the cheesecake filling. It gives the strength that the pie needs to stay put while also putting the ‘cheese’ in cheesecake!
Whipped Topping
This light consistency of whipped topping will add the airiness this cheesecake needs to be a light and fluffy dessert.
Powdered Sugar
Adding some powdered sugar to the filling helps to offset the no-so-sweet tasting cream cheese. Using powdered sugar instead of regular white sugar will help keep the filling smooth and creamy.
Lemon Juice
Don’t skin adding this ingredient! It adds a vibrant burst of flavor while not adding any of the lemony taste.

Cream an 8 ounce block of cream cheese with a hand or stand mixer until it is smooth and creamy.

Add 1 cup of powdered sugar to the cream cheese, mixing slowly until smooth.
Mix in 2 teaspoons of lemon juice.
Next, fold in 8 ounces of whipped topping with a spatula, taking care not to beat the air out it.
Pour into the cooled sugar cookie crust and smooth out.

Cover the cheesecake and place in the fridge to cool for at least 2 hours before assembling.
Assembling the no-bake strawberry cheesecake
Before serving, take the cheesecake and the strawberry topping out of the fridge.
Using a spoon or spatula, pile all of the strawberry topping onto the cheesecake, smoothing out as you go.

Notes on no-bake strawberry cheesecake
Want to keep the pie looking nicer for slicing?
Slice the cheesecake before you add the strawberry topping, that way you don’t have to slice through the strawberries and make a gooey mess.
Have other fruits in season other than strawberries?
You can swap the strawberries for almost any other fruit that you want for your no-bake cheesecake.
Just keep in mind that some kinds of fruit may be more tart than strawberries so you may need to adjust the amount of sugar you add to the fruit topping.

No-Bake Strawberry Cheesecake
Ingredients
Sugar Cookie Crust
- 1/2 cup butter softened
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1½ cups all purpose flour
- 1 tsp baking powder
Cheesecake Filling
- 8 oz cream cheese softened
- 8 oz whipped topping
- 1 cup powdered sugar
- 2 tsp lemon juice
Strawberry Layer
- 1½ lbs strawberries sliced
- 1/2 cup sugar
- 3 tbsp cornstarch or arrowroot powder
- 1/2 cup water
Instructions
For the Crust
