Making a pitcher of refreshing herbal iced tea is one of my favorite things to serve at a party or special event. It is easy to make and is sure to be a crowd pleaser.
Serving herbal iced tea seems to take people by surprise. Just make sure you make enough, because last time I served herbal tea it was gone in a hurry!
This recipe uses fresh peppermint or spearmint leaves but you could also use dried peppermint or spearmint leaves or even some herbal tea bags.
Adding fruit to herbal iced tea makes it even more flavorful, colorful and refreshing.
You can sub any fruit you like in this recipe as well. I use strawberries, but some other delicious fruits you can add include blackberries, raspberries, watermelon, lemons, peaches, nectarines, or oranges.
If you are more of an unsweetened tea person, this is also great unsweetened! Just leave out the sugar and you’re good to go.
For everyday, I usually just drink cold spearmint tea with no sugar added, but I highly recommend the addition of strawberries to take your herbal tea to the next level!

What kind of tea can you use?
You can use either peppermint or spearmint leaves for this refreshing herbal iced tea recipe. I am personally using spearmint because I have access to a very large spearmint patch.
Growing and harvesting your own mint herbal tea is very easy, fun and rewarding. There is nothing like the satisfaction you get when growing your own healthy, delicious drinks.
Growing your own herbal teas is a great way to save money along with beautifying your home and yard. Not to mention, bugs don’t like most herbs and herbal tea plants!
Also, you can use fresh or dried peppermint leaves, or even prepackaged peppermint tea bags.
How to make the tea
There are two ways you can go about making the tea for this recipe.
Hot brewed: heat water to boiling, pull off heat and pour over fresh or dried leaves or herbal tea bag.
Sun brewed: add herbal tea leaves or bags to a jar, add water and sit the jar in direct sunlight all day.
For this recipe, I am going to hot brew my tea and then chill it. Sun brewing tea is an easy, no heat way of brewing your tea, however, it does take quite a bit longer (as in, all day).

Ingredients
Choose one of the following:
- 1/2 cup dried peppermint leaves
- 6 peppermint tea bags
- 3 cups fresh peppermint leaves
Other ingredients:
- 2 cups strawberries (plus more for garnish)
- 8 cups water, divided
- 1/3-1/2 cup sugar (optional)
Directions
1. To a small saucepan add 2 cups of water and 2 cups of strawberries.

2. Simmer this for 10 minutes. Strain out the strawberries, squeezing all remaining juices out of them.
3. Add sugar to the remaining liquid and stir until fully dissolved.
4. In another saucepan or tea kettle, boil 4 cups of water.

5. Pour boiling water over peppermint leaves or tea bags.
6. Let tea steep for 10 minutes, strain out the leaves.
7. Add the strawberry/sugar water to the tea in a large jar (make sure if using a jar to add it slowly so that the jar does not overheat and break).

8. Add enough water to make 2 quarts.
9. Chill in refrigerator until ready to serve.
10. Serve in glasses with ice and garnish with fresh strawberries and mint leaves.

How long does this refreshing herbal iced tea last?
Store this iced tea in the fridge for up to 7 days.
Make sure to store with a lid on the jar as it may pick up flavors of the fridge:).

Refreshing Strawberry Herbal Iced Tea
Equipment
- 2 saucepans
- 1 strainer
- 1 whisk
- 1 1/2 gallon jar
Ingredients
- 3 cups fresh peppermint leaves
- 2 cups strawberries plus more for garnish
- 8 cups water divided
- 1/3-1/2 cup sugar to taste
Instructions
- To a small saucepan add 2 cups of water and 2 cups of strawberries.
- Simmer this for 10 minutes. Strain out the strawberries, squeezing all remaining juices out of them.
- Add sugar to the remaining liquid and stir until fully dissolved.
- In another saucepan or tea kettle, boil 4 cups of water.
